A tasty Kale & Broccoli salad.
It’s all sounding very green isn’t it. But trust me, this salad makes greens more appealing to awider audience, you might find those who usually struggle with the thought of greens enjoying it too!
With the added benefit of providing both cruciferous and bitter vegetables (kale, broccoli and rocket) that aid with digestion and liver detoxification, its also packed full of vitamins such as Vitamin C and the B’s, along with a hearty serving of fibre this salad will leave you feeling fresh and satisfied.
Enjoy alongside your favourite form of protein and a serving of quinoa or rice for a heartier meal.
Ingredients
approx one tablespoon of extra virgin olive oil
1 teaspoon of wholegrain mustard
1 splash Apple Cider Vinegar
juice 1/2 lemon
2 tablespoon of capers
1 tablespoon of tahini
pepper (heaps)
1 tablespoon of nutritional yeast
1 large bunch of kale- chopped finely
2 cups of rocket - chopped finely
2 small heads of broccoli - chopped finely
How to
place the chopped kale into the a large bowl first
drizzle olive oil over kale and then use your hands to massage the olive oil into the kale - this will only take a minute or so
add rocket and broccoli to the bowl and combine with the kale
add all other wet ingredients (mustard, apple cider vingear, tahini and lemon juice) to the bowl and mix through the greens until well combined and the dressing is evenly distributed through the salad
add capers, pepper and nutritional yeast and stir through the salad
