Roast vegetable and tahini bowl.
Here is one of my favourite easy weeknight recipes.
Providing fibre, plant protein, wholegrains, antioxidants and healthy fats, this balanced meal will leave you feeling satisfied whilst also feeding your gut microbiome - win, win right?!
All you need:
Roast vegetables
3 x capsicum - chopped into large chunks
4 x large portobello mushrooms - chopped into quarters
6 x cloves of garlic - remove skin and bruise under knife so that the skin of the garlic breaks and you slightly crush the garlic.
2 tablespoons of olive oil
1 teaspoon of fennel seeds
1/2 teaspoon of sea salt
cracked pepper
1/2 teaspoon of paprika
Rice
1 cup of brown rice - rinsed
1 vegetable stock cube - I use Rapunzel organic vegetable bouillon cubes
Bean salad
1 tin of borlotti beans
1 tin of cannellini beans
1 teaspoon wholegrain mustard
juice of half a lemon
1 teaspoon olive oil
handful of parsley
Tahini dressing
1/4 cup of tahini
juice of half a lemon
1 teaspoon of maple syrup
2 tablespoons of warm water
Method:
preheat oven to 180 degrees Celsius
place rice into a sieve, rinse with cool water and place into medium sized pot, add 2 cups of cold water and bring to the boil, allow to simmer covered for 25 minutes, turn off heat and leave to sit with the lid on the pot for another 5 minutes
chop capsicum, mushrooms, garlic cloves and place into a baking dish
drizzle olive oil, fennel seeds, paprika, sea salt and pepper over vegetables and stir through, place in the oven for ~30 minutes or until vegetables become crispy around the edges
strain and rinse beans and place into a medium sized mixing bowl, add mustard, lemon juice, olive oil and parsley, stir through the dressing and place into the fridge
place tahini, maple syrup, water and lemon juice into a small bowl, use a whisk to combine add extra water as required until the dressing is smooth and not too thick
once vegetables are roasted and rice is cooked place into a bowl, add bean mix and drizzle tahini dressing over the top - gauge your serving size based on how hungry you are, enjoy mindfully
