A nutrient dense biscuit recipe.

Perfect for snacking on during pregnancy and breastfeeding or as an afternoon or pre workout snack 

 

Ingredients

1 cup of crunchy peanut butter  

1 cup of coconut sugar  

1 cup almond flour 

½ cup rolled oats  

4 tbsp almond milk  

6 soaked prunes – chopped roughly  

1 tsp bicarb soda 

2 tbsp organic cacao paste – chopped roughly  

1 chia egg – 1 tbsp chia seeds + 2 tbsp water (leave to soak for 10 minutes to create the egg) 

1 tsp cinnamon  

½ tsp sea salt  

 

Method 

  1. Preheat oven to 180 degrees Celsius  

  1. Combine peanut butter and coconut sugar in a large bowl using hand mixer until combined and smooth  

  1. Add the other dry ingredients – almond flour, rolled oats, bicarb soda, cacao, cinnamon and sea salt, stir to combine 

  1. Add almond milk, prunes and chia egg and stire to combine, the mixture will still be a little sticky but that is okay 

  1. Take 1 tbsp of the mixture at a time and place on to greased baking paper on oven tray with about 5cm between each biscuit 

  1. Place in oven and bake for 25 minutes until the biscuits have turned a golden brown colour 

  1. Take out of the oven and onto a cooling tray to cool before munching on.
