Ginger & Tamari salad with crumbed Snapper
This recipe is a new favourite of mine as the weather gets warmer. It’s super satisfying and packed full of a diverse range of veggies to feed your gut microbiome, antioxidants to reduce inflammation and protein to support your hunger hormones to keep you feeling satisfied after eating.
Salad ingredients
2 heads of broccoli – sliced finely
2 cups of shredded kale
1 cup shredded red cabbage
Half green chilli – sliced
¼ cup of chopped almonds
1 tbsp apple cider vinegar
1 tbsp extra virgin olive oil
1 tbsp lemon juice
Pinch of sea salt flakes
Dressing
5cm ginger grated
2 tbsp tamari (gf soy sauce)
1 tbsp tahini
Juice of half a lemon
1 tbsp extra virgin olive oil
Dash of sesame oil
Dash of maple syrup
Fish
1 fillet of snapper (or any white fish) - chopped into cubes
1 cup GF breadcrumbs
1 egg – whisked
1 tbsp coconut oil for frying
Method
Prepare the broccoli and kale first – place into a large bowl and add apple cider vinegar, extra virgin olive oil, lemon juice and salt – massage into the kale leaves and broccoli – place in the fridge for 5 minutes before adding the red cabbage, green chilli and almonds
Place all ingredients for the dressing into a bowl and stir to combine – until the tahini is smooth with no lumps or separation this can take a minute or so of stirring, drizzle over the salad
Prepare fish by dipping cubes into egg, roll fish through bread crumbs until evenly coated
Heat coconut oil in a frying pan, until oil is hot enough to create a bit of a sizzle when you place the crumbed fish into the oil, fry evenly for around 2 minutes on each side depending on the size of the cubes this may take a little longer – check that fish is cooked through.
Serve the salad and place fish on top, enjoy!
Beneficial ingredients
Broccoli, kale & red cabbage - are cruciferous vegetables, this group of vegetables are supportive of liver health and function to support normal detoxification pathways. They also contain a substance called indole-3-carbinol which assists in promoting urinary excretion of oestrogen metabolites. Broccoli also contains vitamins and minerals such as Vitamin C, Folate, Iron, Vitamin K1 to support energy production and overall health. Due to their insoluble fibre content these vegetables support overall gut health and promote bowel regularity.
Extra virgin olive oil - is a source of omega-3 healthy fats which assist in reducing inflammation and support hormone health.
Tahini - is a great source of plant protein and calcium.
Ginger - provides anti-inflammatory and antioxidant effects and is a great support to the immune system as a result.
Snapper - contains protein, omega-3 fats and provides a great source of vitamin B12.
A note on gluten free ingredients - I choose to use gluten free options in most of my recipes because that is what works for my body, if gluten agrees with you please feel free to substitute ingredients containing gluten.
